Milho: uma visão aprofundada
O milho (Zea mays) é o grão comestível (semente) da planta de cereal pertencente à família das gramíneas (Poaceae). Essa safra domesticada é originária das Américas e é uma das safras alimentícias mais amplamente distribuídas no mundo.
O milho é utilizado como ração para gado, alimentação humana, biocombustível e matéria-prima em diversas indústrias. As variedades de consumo mais populares são o milho amarelo e branco.
Existem também variedades de milho com grãos vermelhos, azuis, rosa e pretos que geralmente são em faixas, malhados ou listrados. Esse é o resultado de uma interação genética incrível!

Tipos de milho
Milho dentado: Possui uma depressão na coroa do grão que é causada pela secagem desigual do amido duro e mole que compõe o grão.
Milho Flint: Contém um pouco de amido macio e não apresenta depressão.
Farinha de Milho: Composto em grande parte por amido macio e com grãos macios, farinhentos e facilmente moídos.
Milho doce: Possui sementes translúcidas enrugadas. O açúcar da planta não é convertido em amido como nos outros tipos, conferindo-lhe doçura.
Pipoca: um tipo extremo de milho duro que se caracteriza por grãos pequenos e duros, sem amido mole. O aquecimento causa a expansão da umidade nas células, fazendo com que os grãos explodam.

Corn contains 21.9 μgg of lutein and 10.3 μg/g of zeaxanthin, along with ß-cryptoxanthin and ß-carotene. When white, yellow, high-carotenoid, blue and red corns were tested for their lutein content, it was found to be the highest in yellow corn (406 µg/100 g) and lowest in blue and white corns (5.2 and 5.7 µg/100 g, respectively) (10).
